Baked Sweet Potato Fries & Broccolini


  • 1-2 people


  • 1 large sweet potato

  • 2 tsp everything bagel seasoning

  • 2 tsp parsley

  • 3 cloves of garlic, minced

  • 4 tbsp olive oil

  • 1 head of broccolini

  • 10-12 cherry tomatoes

  • ½ - 1 c mushrooms

  • ½ tsp cumin

  • ½ tsp oregano

  • ½ tsp paprika

  • ½ tsp onion powder

  • ½ fresh lemon

  • Salt to taste


Sweet Potato Fries

  • Preheat oven to 435 degrees and line a flat baking pan with parchment paper

  • Skin the sweet potato, cut into strips, and place them into a mixing bowl

  • Coat the strips with 2 tbsp of olive oil

  • Add everything bagel seasoning and parsley; then mix thoroughly

  • Put into oven and bake for 35 minutes


  • In the meantime, dice the broccolini, tomatoes, and mushrooms

  • Set aside in a mixing bowl

  • Heat 1 tbsp olive oil in a large skillet over medium heat

  • Drizzle 1 tbsp of olive oil into the mixing bowl of veggies and mix around

  • Add the spices to the mixing bowl and mix thoroughly

  • Mince the garlic and add to the skillet; cook until lightly browned

  • Empty contents of mixing bowl into skillet, mix it around in the garlic, and cook until broccolini is softened but still crunchy

  • Serve with sweet potato fries and fresh lemon

Recipe Notes

  • Careful not to overcook the broccolini; it should still be somewhat crunchy and bright green when taken off the stove
